    Our Earth: A Gem In the Universe

    As I think of our earth, I’m awestruck. Nothing man made compares with natures beauty.

    Lately I have been reading and teaching about astronomy. The more I learn about our existence, our universe and beyond, the more wonder I feel. We are part of something amazing. We do not have all the answers about our existence and many of our current beliefs concerning our universe are theoretical. (Very well thought out theory but still theory.)

    There are billions of planets in our galaxy alone and eight or nine in our Solar System. Our closest neighbors have extremely harsh environmental conditions as do most of the planetary bodies of which we are aware.

    Isn’t it amazing we are at a perfect distance from the sun to provide just enough warmth and energy to safely power our entire earth? Enough energy to warm our soil and grow our food. We have an atmosphere containing just the right amount of oxygen and carbon dioxide and nitrogen for animal and plant life to thrive in a symbiotic relationship.

    Our Earth is a gift beyond compare, more beautiful than most of us realize. We have abundant clean oceans, soil and waterways. Our earth supports approximately 8.7 million species, 6.5 on land and 2.2 in our oceans.

    It is a crime against humanity and all living things to abuse and pollute this great Earth of ours. We have to make every effort to live symbiotically with our surroundings, protecting, nurturing and respecting all life forms and our earth which supports us all.

    Italian Easter Bread

    Here is a healthy addition to your Easter meal.  It has become a tradition in my house.  Enjoy!

    Ingredients:

    • 1 package Rapid Rise active dry yeast, about 2-1/4 teaspoons
    • 2/3 cups milk • Pinch of salt
    • 2 T butter or extra virgin olive oil
    • 2 eggs, beaten
    • 1/4 cup sugar
    • 2.75-3.25 cups flour (approximately)
    • 5 cooked dyed Easter eggs dyed with natural food coloring available at Wholefoods

    Combine dry ingredients in large bowl

    Heat milk and butter in small saucepan over low heat until warm 120-130 degrees F

    Add to dry ingredients and beat for 2 min at medium speed Add 2 eggs and ½ C flour and beat at high speed for 2 min

    Stir in enough additional flour to make a soft dough Turn on to a floured board and knead for 8-10 min. ( if you have a Kitchen Aid mixer use the kneading attachment it’s a lot easier! )

    Place dough in a lg bowl greased with butter.  I use a stainless steel bowl and place it on the top of my stove (not on a burner or near a hot burner).

    Cover with a slightly damp towel. I always use an organic or natural flour sack towel for this, to avoid unwanted toxins such as dioxins used as bleaching agents.  These are not always easy to find.  A good source is www.lillyandpineapple.com  Let rise until doubled.  It takes about an hour.

    Remove from bowl and punch down dough on floured board. Divide in half and roll each half with your hands (flour your hands) into a 24 inch long rope. Twist the ropes loosely to form a ring on a greased with butter or olive oil baking sheet.

    Brush or drizzle with melted butter Place your cooked colored eggs into spaces on the twist. Cover with your food safe towel.  Let rise for about an hour until doubled.

  • For a quick energizer sniff peppermint

    Put two Drops of organic essential oil of peppermint on a cotton ball. Place in a small container to bring along while shopping.  Sniff for a quick energy boost while getting a little germ protection at the same time.  Peppermint is an energizer as well as an antiviral and antibacterial.

    A new British study shows that drinking three cups of black tea daily can reduce the risk of having a heart attack by 11%.  To reduce pesticide exposure drink organic tea.  Buying in bulk or a store brand of organic is more reasonably priced.

    Boston University and Abraxis Research conducted a study which tested the levels of glyphosate found in honey products in the United States.  Glyphosate is the main ingredient in Monsanto’s Roundup.  Roundup has been on the market since 1973 and is considered to be moderately toxic.

    Forty one of sixty nine honey products tested were positive for glyphosate contamination at a mean average level of 64ppb.  15 ppb is the maximum amount considered “safe”.

    The bees are contaminating their hives by visiting nearby fields which have been sprayed with Roundup.  In the south the cotton and soybean crops which are genetically modified are sprayed with Roundup.  In the upper mid west the clover and alfalfa are routinely sprayed.

    I personally would prefer no contamination with Roundup!   I purchase honey from New England and will continue to do so.

    applesAn apple a day is great for all the reasons you’ve heard before.  An apple a day will help relieve anxiety as well (if not better) than anti-anxiety medication.  The only side effect of eating an apple is much better health.  There is an antioxidant in apples, chlorogenic acid, which induces soothing calm. Enjoy the fruits of this year’s harvest all year long.

    I’ve been telling my husband ” leave the leaves” for years.  He now shreds the leaves on the lawn with a lawnmower and adds as many as possible to the compost.  Most of our yard is wooded so it is great just to let them decompose where they fall and return the nutrients to the soil.  The odor of the leaves mingled with an autumn frost and fallen apples makes everyone smile!

    What is more inviting than the scent of fresh air and lemons?  Bring both into your home.

    Open your windows whenever possible to bring the clean air into your home. This will help vent out the harmful substances which may have entered over the winter and stayed.

    To eliminate odors simmer some lemon slices. Most commercial air fresheners contain toxic chemicals.  Using all natural lemon is a safe healthy alternative. Add 8 slices of fresh lemon to two cups water and simmer.  As the water evaporates the scent of lemons will disperse throughout your home. ( Be careful not to let the pan boil dry.)

    Your home will smell lemony fresh!

    Put a few drops of essential oil of orange on a cotton ball. Wipe on entry points or place the cotton balls in strategic locations. Do not rub the oil on a surface where it might become slippery and cause a fall. The essential oil of orange contains limonene which is toxic to ants and they will avoid the area. It is a nice natural deterrent.
