    Healthy Italian Easter Bread Recipe

    Italian Easter Bread

    Here is a healthy addition to your Easter meal.  It has become a tradition in my house.  Enjoy!

    Ingredients:

    • 1 package Rapid Rise active dry yeast, about 2-1/4 teaspoons
    • 2/3 cups milk • Pinch of salt
    • 2 T butter or extra virgin olive oil
    • 2 eggs, beaten
    • 1/4 cup sugar
    • 2.75-3.25 cups flour (approximately)
    • 5 cooked dyed Easter eggs dyed with natural food coloring available at Wholefoods

    Combine dry ingredients in large bowl

    Heat milk and butter in small saucepan over low heat until warm 120-130 degrees F

    Add to dry ingredients and beat for 2 min at medium speed Add 2 eggs and ½ C flour and beat at high speed for 2 min

    Stir in enough additional flour to make a soft dough Turn on to a floured board and knead for 8-10 min. ( if you have a Kitchen Aid mixer use the kneading attachment it’s a lot easier! )

    Place dough in a lg bowl greased with butter.  I use a stainless steel bowl and place it on the top of my stove (not on a burner or near a hot burner).

    Cover with a slightly damp towel. I always use an organic or natural flour sack towel for this, to avoid unwanted toxins such as dioxins used as bleaching agents.  These are not always easy to find.  A good source is www.lillyandpineapple.com  Let rise until doubled.  It takes about an hour.

    Remove from bowl and punch down dough on floured board. Divide in half and roll each half with your hands (flour your hands) into a 24 inch long rope. Twist the ropes loosely to form a ring on a greased with butter or olive oil baking sheet.

    Brush or drizzle with melted butter Place your cooked colored eggs into spaces on the twist. Cover with your food safe towel.  Let rise for about an hour until doubled.

  • For a quick energizer sniff peppermint

    Put two Drops of organic essential oil of peppermint on a cotton ball. Place in a small container to bring along while shopping.  Sniff for a quick energy boost while getting a little germ protection at the same time.  Peppermint is an energizer as well as an antiviral and antibacterial.

    Boston University and Abraxis Research conducted a study which tested the levels of glyphosate found in honey products in the United States.  Glyphosate is the main ingredient in Monsanto’s Roundup.  Roundup has been on the market since 1973 and is considered to be moderately toxic.

    Forty one of sixty nine honey products tested were positive for glyphosate contamination at a mean average level of 64ppb.  15 ppb is the maximum amount considered “safe”.

    The bees are contaminating their hives by visiting nearby fields which have been sprayed with Roundup.  In the south the cotton and soybean crops which are genetically modified are sprayed with Roundup.  In the upper mid west the clover and alfalfa are routinely sprayed.

    I personally would prefer no contamination with Roundup!   I purchase honey from New England and will continue to do so.

    I’ve been telling my husband ” leave the leaves” for years.  He now shreds the leaves on the lawn with a lawnmower and adds as many as possible to the compost.  Most of our yard is wooded so it is great just to let them decompose where they fall and return the nutrients to the soil.  The odor of the leaves mingled with an autumn frost and fallen apples makes everyone smile!

    What is more inviting than the scent of fresh air and lemons?  Bring both into your home.

    Open your windows whenever possible to bring the clean air into your home. This will help vent out the harmful substances which may have entered over the winter and stayed.

    To eliminate odors simmer some lemon slices. Most commercial air fresheners contain toxic chemicals.  Using all natural lemon is a safe healthy alternative. Add 8 slices of fresh lemon to two cups water and simmer.  As the water evaporates the scent of lemons will disperse throughout your home. ( Be careful not to let the pan boil dry.)

    Your home will smell lemony fresh!

    Put a few drops of essential oil of orange on a cotton ball. Wipe on entry points or place the cotton balls in strategic locations. Do not rub the oil on a surface where it might become slippery and cause a fall. The essential oil of orange contains limonene which is toxic to ants and they will avoid the area. It is a nice natural deterrent.

    Luteolin a flavonoid found in veg and herbs is considered as a possible treatment option for Triple Negative Breast Cancer.

    Researchers at the Dept of Biomedical Sciences, University of Missouri, have shown that Luteolin, known to be effective in combating several types of cancer, also has the ability to suppress metastasis of Triple Negative Breast Cancer. Further research is being conducted to consider luteolin as a possible treatment option.

    Luteolin, a non toxic plant compound, occurs naturally in broccoli, parsley, green peppers, parsley, thyme, chamomile tea, carrots, olive oil, peppermint, rosemary, navel oranges, and oregano.
