Organic Pecan Cinnamon Rolls

pecan cinnamon roll 2aWho doesn’t love the smell and taste of pecan cinnamon rolls? With this recipe you can make them very easily and enjoy these delicious cinnamon rolls that are topped with pecans and icing. You can make them and then refrigerate overnight. Bake in the morning to enjoy your rolls hot from the oven.

INGREDIENTS:

  • 2 tablespoons organic extra virgin olive oil
  • 1 cup whole organic milk, warm
  • ½ cup organic granulated sugar
  • 2 large organic eggs
  • 2 packets instant yeast
  • 1 teaspoon organic vanilla extract
  • A smidgen of salt
  • ¼ cup organic butter melted
  • 4 ½ cups organic white wheat and barley flour
  • ½ cup organic brown sugar
  • 2 tablespoons organic ground cinnamon
  • ¼ cup organic pecans, crushed

Pour organic extra virgin olive oil into a large bowl. With mixer set on medium speed, add organic milk, organic sugar, organic eggs, yeast, organic vanilla, salt, and organic butter. Beat all together until mixed. Slowly add the organic flour until dough comes together. Flour your hands and transfer the dough onto a floured surface. At this time the dough will be sticky. Knead dough, sprinkling up to a ¼ cup of organic flour onto to the dough, until it is no longer sticky and dough forms a ball.

Coat a large bowl with organic extra virgin olive oil. Place the dough into bowl and cover with a damp towel. Place in a warm draft free place. Let rise for 2 hours.

Grease a 9 by 13 inch pan

Again flour your hands. Punch down dough and transfer it to a lightly floured surface. Flour the rolling pin and roll dough out into a 20 by 12 inches rectangle. Heat 2 tablespoons of organic butter until melted. Brush organic butter onto the dough. Sprinkle dough with organic brown sugar and organic ground cinnamon. Roll dough tightly, starting on one long side, into a cylinder shape. Cut dough into 12 pieces. Place into the pan. Cover with a damp towel. Place the pan in a warm draft free place. Let rise 1 hour. You can refrigerate overnight at this point. If the roll are refrigerated let sit for 30 minutes, to come to room temperature. Then proceed as follows.

Preheat oven to 375 degrees. Remove towel from pan. Place pan in oven and cook for 30 minutes or until rolls are a golden brown.

Sprinkle top of rolls with the crushed organic pecans.
