Citrus Peels Offer Cancer Protection

We are right in the middle of citrus season where supplies are plentiful and the fruit tastes delicious.   This is a great time to incorporate citrus fruit including the peel into our diet.  According to research carried out at the University of Arizona consuming peels of oranges and grapefruit can significantly reduce the incidence of squamous cell skin cancer.  Grate some on salads, pancakes, waffles, french toast or green beans etc.
