Bourbon Soaked Apple Cake

Autumn is apple picking season, and what better way to celebrate this wonderful time of year than with an Apple cake.  This cake, made with organic ingredients, and soaked with Bourbon or apple cider is sure to be a crowd pleaser.  To make this delicious cake more festive serve it with real homemade whipped cream.  I buy most of my organic ingredients at Whole Foods.  The prices for bulk items are quite reasonable.

Bourbon Soaked Apple Cake

  • 4 medium organic apples (peeled, cored, and chopped)
  • ¾ cup bourbon or apple cider
  • 2 cups organic sugar
  • ½ cup extra virgin olive oil
  • 2 eggs
  • 2 cups organic flour
  • 2 tsp. baking powder
  • 2 tsp. ground organic cinnamon
  • ¼ tsp. ground organic nutmeg
  • ½ tsp. baking soda
  • Whipping cream (optional) recipe at the end

Preheat oven to 350 degrees.  Grease a 13 inch by 9 inch baking pan.  Place apples in large shallow dish.  Pour bourbon and/or organic apple cider over organic apples. (You can use 1/4 cup of bourbon and 1/2 cup of organic apple cider for a less strong bourbon taste or 3/4 cup of organic apple cider for a non-bourbon taste)  Cover the apples, put to one side to use later.  Stir the organic apples occasionally to keep the apples coated with the bourbon.

In a medium bowl beat together with a whisk organic sugar, extra virgin olive oil and eggs, until combined.

In a large bowl mix together organic flour, baking powder, organic cinnamon, organic nutmeg, and baking soda.  Add egg mixture and organic apples with bourbon and/or organic apple cider.  Mix together until well blended.

Pour batter into the greased baking pan.  Bake 50 to 55 minutes or until toothpick inserted into center of cake comes out clean.

Serve warm or at room temperature with homemade whipped cream.

  • 1 cup organic heavy cream
  • 1 tablespoon organic sugar
  • ½ tsp. organic vanilla extract

For best results chill a large mixing bowl a few minutes before making the whipped cream.

In the chilled bowl add organic heavy cream, organic sugar and organic vanilla extract.

Turn mixer on high, continue untill the cream becomes thick and whipped, about 5 minutes. Sever on the Bourbon Soaked Apple Cake.
