Amazing Fall Vegetables

Pumpkin, squash and sweet potatoes are not only comforting and delicious to eat but have some amazing health benefits. According to researchers at Thomas Jefferson University in Philadelphia any vegetable high in beta-carotene can activate 443 genes which are able to turn precancerous cells in the breast back to healthy cells.

Beta -carotene is the pigment which produces the orange color in these wonderful fall vegetables and is a powerful antioxident.  Our bodies change beta-carotene into vitamin A which is essential for  healthy skin, bones, mucus membranes and is necessary to protect our eyes and vision.  To facilitate nutrient absorption eat a little fat such as extra virgin olive oil or a small amount of butter.

Vitamin A is also available in egg yolks and butter.

These fall vegetables are also rich in alpha-carotene which protects against heart disease and cancer; especially lung cancer.

Never take beta-carotene supplements.  They actually can be damaging to your health.
